Vegan Coconut and Oat Biscuits...Biscuit of the week...

We had the oven on last night for a veggie bake and garlic bread (mmm!) and so I baked some coconut and oat cookies too! Sadly the first batch got burned, but the second lot are delicious!


I got the recipe from here, but veganised it by swapping the butter for vegan margarine and the honey for golden syrup. I froze half the dough so I can have fresh cookies next time I have the oven on too!

    Do you freeze the dough in a big blob (in a reusable container) or in individual cookies (frozen on a plate)?

    I freeze the doigh in a big blob in an margarine tub! Then I leave it out to defrost or put it in the microwave for a few secs if I'm in a hurry before useing it. I'm sure the other way would work too though. I saw on the TV a chef who made cookie dough, rolled it into a roll, covered it in cling film then froze it, so she could cut off as many cookie slices as she wanted to bake, which seems like a good idea too, if you substitute the cling film for something more environmentally friendly!

    I think I'll try something like that next time we bake cookies or muffins!! :)

    We only have small margarine tubs so something a bit bigger would probably be better!
