Vegan Ginger Biscuits...My New Faaaaavvooorriiiitttte Biscuit...

 We've been making these biscuits constantly chez moi, they're perfect and seem to go right no matter what you do to them!   

Ingredients -
12 oz plain flour
6oz soft brown sugar
4oz margarine
1 'egg' (I use ogran 'no egg' replacement powder)
4 tbsp syrup
1 tsp bicarb
1/2 tsp ginger

Mix the dry ingredients together, melt the margarine and syrup together and add to the mix, add some water (soya/rice milk or what ever you use) if it's still to dry, roll out thinly (about half a centimetre) and cut out, put on a tray and bake at gas mark 5 for 10/15 mins, remove, cool and nom!



I've also been making a chocolate version, with coco powder (maybe 1 or 2 tbsps) and chocolate chunks! yummy!

The mix makes lovely chewy cookies if you don't bake it for so long, or crunchy ones (but not so crunchy they hurt your teeths) if you leave it in a bit longer.  The cookies seem to go chewier and softer after a couple of days kept in a tin anyway.  I really miss these cookies I used to eat before I went vegan, that were about as big as my face and all chewy and soft...these ones are an almost similar texture...yey! 

This recipe makes a lot of biscuits, so you might want to halve it!  Or the mix freezes well too.

Ps. I'm in love with my new gingerbread man family biscuit cutters, they were a present from my mum for Christmas, aren't they adorable!
